Jaggery (Gur)
Jaggery is a traditional sweetener made by evaporating raw sugarcane juice without separating the molasses from the crystals. It is known as "panela" in South America & Mexico, "gur" in Pakistan and India, and is softer than refined sugar, varying in color from yellow to dark brown. Where refined sugar loses much of its nutritional content during production, jaggery contains trace minerals and vitamins, making it a truly healthier alternative sweetener. It is produced with out using any chemical and quality is usually good and liked by people for different domestic usages. It has ready market in the countryboth in wholesale and retail rather it is exported to neighboring countries, such as Afghanistan and Central Asian States. For making Jaggery Pakistan’s Northern province KhyberPakhtoonKhwa (KPK) has developed small cottage industry where “Gur” is processed very efficiently using motorized crushing for enhanced productivity.
